Hog processing offers some of the most versatile cuts and specialty products you can put in your freezer. At Little Brother’s Butcher Shop, we help farmers and customers who have purchased hogs from local producers turn their animal into exactly the pork products they want.
Our shop is an Illinois state-inspected Type I facility regulated by the Illinois Department of Agriculture (IDOA). This allows us to perform both state-inspected processing and custom-exempt processing. Products processed under state inspection may be sold within Illinois, while custom-exempt products are processed for the owner of the animal and are not for resale.
Our pork processing includes all the standard cuts—chops, roasts, ribs, and ground pork—plus specialty items that make hog processing special. We offer traditional bacon curing and smoking, fresh and smoked sausage making with your choice of seasonings, and ham processing.
